VQA Lake Erie North Shore
This vintage was remarkable. After a cold early May, the entire growing season was hot and dry, extending into September and October. The dryness allowed for an even maturation and an early harvest, giving lower yields and good fruit concentration.
We selected a portion of our Chardonnay block to be tended to only by hand. The hand harvest fruit was pressed with no crushing or destemming. The juice settled over night before racking into new French oak barrels. Alcoholic fermentation was spontaneous, finishing to dryness with no malolactic fermentation. This wine stayed on the lees for 12 months.
This wine is full bodied, with a creamy finish. Tastes of butter and toast showcase the Lake Erie North Shore and CHV vineyards.
We have made only 40 cases of this Estate grown and bottled wine. Drink now or over the next 10 years.
